The core rulebook says what I found about all checks to mod being easy after you do the math. And it also says all.

I get what Matt's saying now: the crystal/attachment mod that @Rabobankrider said you could get is the free one. Then you use the modification check for the first time, which is normally hard, but difficulty goes down by 2 whenever you work on it. So you technically get a second one for an easy Mechanics check.
And just to be sure, I think modding difficulty starts increasing the more you mod it, as it's getting harder and harder to mess with said item without breaking it.
Then again, this is all assuming we're actually rolling to build our lightsaber hilts per the GM Kit, which is up to @Rabobankrider

I don't think it makes all checks easy? I think you are referring to the -2 difficulty on the check due to....I think the fact that you made the hilt yourself? The difficulty of each consecutive mod still increases as normal. And while -2 difficulty is great, it still means that when you get towards the maximum mods for your crystal, you are still rolling a harder difficulty.

Yeah I think it starts easy because it is your lightsaber, but then it goes all the way up to Formidable when you run out of upgrades. Is the easy one after the free one you get then?

Yep.
So for general modding rules for Force and Destiny, it's on the Core Rulebook, page 192. For the difficulty decrease, that's on Core Rulebook, page 196.
And now a question from me: since the Jedi Utility Belt from Keeping the Peace (page 52) has a Jedi multi-tool with it, does the Jedi multi-tool count as a standard tool kit, or does it count as Lightsaber Maintenance Kit as listed in the same book (page 53), since the maintenance kit refers to itself as a multi-tool?

Not quite. The first one would normally be Easy, but it's automatic instead. The second one is Average (Easy with difficulty increased once for being the second mod). For all other attachments, the first mod is Easy, the second Average, etc.

I can't recall honestly. I remember this coming up in an episode of the O66 a while back, when the rules were first published, but I can't recall what the ruling was. I think GM Phil's ruling was that the first mod, while free, still counts towards the cumulative difficulty, meaning the 2nd mod, while being the first one you have to roll for, would still have the difficulty as if it were the 2nd mod you had rolled for.
Honestly, I'm not the best source of information on this stuff, my memory is crappy on the best of days, and I tend to gloss over really crunch heavy mechanics stuff in general. You might post it in the F&D general forum for clarification. I am 100% certain that you will get a plethora of responses about this.

Oh, is that how it works? I seem to be wrong then in thinking that the easy check was still valid. So it's automatic replacing the Easy check, then it goes straight to Average.
The GM Kit's last sentence, "This still counts towards the total number of mods installed on the attachment." seems to suggest that, too, if we're taking the total number of mods installed as the basis for difficulty.

Well, I'm using Endless Vigil to build his right now (well after I make character advancements, so that he actually has the skill to do it).

If we're crafting lightsabers: which one should we all use - the GM Kit rules or the Endless Vigil rules, so that we're all on the same page. Or are we allowed to choose?

My suggestion, add Artisan, or Armorer, unless you're current career or spec has Mechanics as a career skill already.
Zoroku is currently a Shien expert then he will go shadow and then Artisan or Armorer I'd have to decide.

Zoroku's sheet is updated I guess the Lightsaber will be made after so he still gets the free crystal upgrade but he may get some fancy stuff on the Saber too.
