I finally got around to watching Rebels. I wasn't really interested in watching it when I saw the original preview clip. Too much for kids. But I decided to give it a try after talking to some adults my age (I'm over 40) at the local game shop who enjoyed it. I'm up to episode 12 of season 1 and I have to say I'm enjoying it and plan on watching season 2.
It isn't perfect of course. I would have preferred that it had been targeted for a little older audience. But the quality of kids programming is so much better than when I was a kid. There is an actual story arc throughout the episodes and adults can actually enjoy it if you are willing to overlook some of the silly elements. I actually get a chuckle out of watching some of Chopper's antics. (A droid with an attitude! :-) Thankfully the laser slingshot only appeared briefly in a few episodes before Ezra got a real weapon.
As for what I like. I think all the heroes are interesting and unique. Many of the space battles are really well done and give me the feel of scenes from the movies. The Inquisitor is definitely a menacing adversary for the heroes and he ensures that the Empire feels like a credible threat despite the fact that rank and file Storm Troopers are often defeated a little too easily. I'm looking forward to seeing how the Kanan/Ezra/Jedi story develops in future episodes.

My fiance and I are re-watching Season 2 and it holds up very well. I shan't spoil it for you, but some things that I remembered as disappointments actually aren't when viewing the season as a whole.

Seriously, Kanan giving Sabine saber lessons is something I didn't realize how much I wanted to see.
WOW! Didn't see Maul and Kenobi coming. I just hope Thrawn makes a sizable impact in the end. Everything has felt like a chess match with him and I will be really disappointed if they end his story in Rebels with a whimper.

There appears to be a ship looking similar to a Dreadnought Heavy Cruiser in th Rebel fleet. It jumps in on the upper-left of the screen the first time we see the fleet.
Appears as if we are jumping down into the Mandalorian fan service hole again. Anyone who dislikes Karen Traviss' portrayal of the Mandalorians looks like they'll be losing all credibility.
