On the launcher, click the Data Folder button. It'll open up the current folder in which the data is stored.

You can select exactly what you want backed up and it'll create a ZIP file with everything in it. You can then use that file with a new install on another system by clicking Restore. Note that it's a good idea to periodically do a Backup just in case something happens to your data (like a hard drive crash).
A better solution is to keep your data on a cloud service, then change your data folder to the local cache directory for the service. That way, your data is always available to you, no matter what computer you're using. And, if you give members of your group access to the directory, you can all share the exact same data.

But it still has all the information I don't want in the creator. Short of manually erasing everything a slow and long process entry by entry is there a way to do it all at once? One thing I noticed is that the bind force power is not available to select when making a force sensitive character. Can we add that in a future date..or is there something I screwed with that deleted it as a selection during the character creation process....I'm pretty confused and not sure how to even fox this mess I've made of the program

Bind requires a 2+ Force rating, so if you only have a FR of 1, it won't show up in the list.
The easiest way of setting your data (and not characters, encounters, etc) back to default is to go into your data folder from the Launcher and rename the "DataCustom" directory to something else. The next time you run an app, "DataCustom" will be recreated with nothing in it, so only base data that comes with the apps will be available.

Yes. I use Google drive to have a shared data set among my many devices. If your entire party has access to that Google drive, then simply point the builder to that drive as the data source.

Now, instead of the default path for custom data, the app will look in that folder. Prior to selecting this folder, though, it's a good idea to copy the data into it from the existing location. That way there's data there and the program won't crap out on you...

2) Career, Select Mystic and Makashi Duelist
3) Specializations, Buy up to Defensive Training
4) Equipment, Add Basic Lightsaber
5) Click Equip for the Basic Lightsaber
6) Melee Defense remains at 0 (In my case)
The oddity here is that the Basic Lightsaber does not have the Defensive 1 quality until Equipped or Carried, and it loses that property when not Equipped or Carried, so that piece is working right.
This also will work if I add an attachment which grants the Defense 1 quality (Lorrdian Crystal + Mods for example).
This also works if I use a weapon which has a native Defensive bonus.
It almost looks like Defense added via Talents to equipment (I tested Sixth Sense and Superior Reflexes, those work) isn't being factored correctly to raise the "Character" Defense values, but all other sources are working correctly.
Autopilot Droid Brain is supposed to be 6,000 credits, not 7,500 credits. The Astrogation Droid Brain is 7,500. The Autopilot is also rarity 5, not 6.
I created an Adversary using the GM Tools. It is stacking all of the Defensive/Deflection with Armor and such.
The equipment loadout is as follows:
Armored Robes
Personal Deflector Shield
Lightsaber: Curved Hilt, Lorrdian Gemstone with two Quality Delfection Mods and one Quality Defensive Mod
Lightsaber: Curved Hilt, Krayt Dragon Pearl
This results in the character having Ranged Defense 5 and Melee Defense 7.
Creating, essentially, the same character as a PC results in having Ranged Defense 2 and Melee Defense 2.

Checked it out of curiosity and you're right. It adds the quality (Defensive) to the saber but it's not factored in final calculation. Perhaps it's about the order in which the program does things? And "natural" Defensive and Deflection work perfectly.
