I get that you only get one of the three when starting out... but I'm not seeing any information on choosing the others as an advancement.

You don't get to pick the other special abilities. Its a one time decision. If you want more, ask/beg your GM. It would be interesting to see, but it would need some sort of RP behind it to be good.
