Has anyone created any content for an Old West setting or a Gunslinger type character?

There was an old conversion for Edge of the Empire set in the Old West (I think it was called Edge of the Union; you can search the Edge of the Empire forums for it), and seeing as the rules are almost 1=1, it should provide some ideas on how to build a Genesys campaign.

Gunslinger is a pretty easy build though. Rapid Reactions + Quick Draw + Quick Strike is basically all you need for a gunslinger. Throw in Dual Wielder, Fan the Hammer and Forgot to Count for some added flavor. The Star Wars Gunslinger specialization incorporated a few talents that you could consider adding back to the game; Sorry About the Mess (which reduced the critical rating of your weapon against targets that have not acted in the encounter, similar to Quick Strike), Lethal Blows (which increases critical injury results), Improved Quick Draw (for dual pistols), and Spitfire (which allowed hitting multiple targets when attacking with two weapons).

I made a setting called "Cowboys and Dinosaurs" if you're looking for something a little more... odd.
