If I have a unit behind a small log (light cover) and in front of that is a small tree also light cover. Do they stack to give me heavy cover?

No, two sources of Light Cover will not stack. However, some things (like suppression and the Cover X keyword) do specifically add one to a unit's cover value, though. They are NOT giving a unit Light Cover, they are increasing it from 0 to 1 or from 1 to 2.
