When you cast the Kiho power "Water Fist" (Page 187 of Core Rule Book) and inflict a critical on your opponent do you use the Deadliness value of the weapon you are wielding, for example a value of 5 for a Katana or 2 for an Unarmed Punch. Or is the deadliness value 8, as it states under the section of Unspecified Deadliness on page 270 of the core rule book that Kiho has a deadliness of 8?

This question about deadliness value could also come up for the Fire invocation power where you summon a weapon made of fire. Would your katana made of fire have a deadliness of a base katana or would its deadliness be equal to your ring value pulse strife symbols kept on that check (Page 270 of core rule book)?

Water Fist enhances your Unarmed profile, so there is a specified deadliness, those of your Unarmed attack profile.
For the Burst damage of the Kiho, it is Unspecified since it is only "damage" and not an attack with a Weapon Profile, so in the case of a kiho, the deadliness would be 8 for the Burst effect.

For Taoist Blade, the deadliness is still 8 for the Burst Effect, but, if you make attacks using your one handed weapon with the Enhancement, you would use the deadliness of the one-handed Weapon (5 in the case of a Katana).

For Katana of Fire, you also use the Katana weapon stats for damage and deadliness. Plus what the Invocation says, in that case, the damage of this summoned Katana becomes Supernatural.
