So if i were to move out far enough to see them, I would get light cover if they shot me because the middle of the model would be exposed in order to shoot them? Assuming
the highest part of the model is dead center.

You would get whatever type of cover you and your opponent decided the terrain provides. Buildings are typically heavy cover.
Assuming that you move out far enough to see the edge of his base, but without exposing the center point of yours. If the center line between the minis is clear, neither of you gets cover.
