Am I correct in understanding you could attack during your activation and be sitting there with 3 standby's and attack three more times during opponent activations?
If I remember right attacking during your activation just prevents the standby action. It won't prevent the using of a standby token.

Nope. As soon as you make an action with Obi, he will loose all his standby tokens. Also, you cannot have more than one standby token. Compare RR p. 59

Only time that works is with deploy the Garrison, so you get your standby tokens at the beginning of the turn, and you wait to activate those units until they have used their tokens. Then you can get off two shots in one turn.

I would say you get the potential extra attack from the standy token but it has to be before you activate Obi-Wan otherwise you lose your standby token
