I had a thought for the grizzly outcome of vehicles that get destroyed in play: ground vehicles fall and remain as cover and speeders crash causing damage and remaining as cover.
Details:
When a ground vehicle is reduced to no HP, rather than just removing it from play, replace it with a token the size of the original model's base (or a modeled version of the smashed up vehicle in question) and this now acts as cover.
Speeders have an added complication: once destroyed, the model makes an immediate compulsory move, representing the pilot still being able to steer as he's crashing. The wrecked speeder token/model would be placed at the end of the compulsory move and any models that would have been under the path it took would be displaced and any models that would have been in the final crash site are displaced and are subject to an attack die (maybe black? not sure what would be best). The wrecked model/token remains there as cover.
I definitely want to try this as a house rule.
