I remember seeing it played that way in the demo.

Yep, it just gives you a free attack action, that's it. No aim. And you can only attack once, even if it's free. I don't know where they got that relentless gives an aim...
The answer is simple, Vader can NOT attack twice. He is only ever allowed to attack once a turn.
This is clearly stated as an example of page 12 of the Rules Reference.

And since Saber Throw states thats its considered an attack action, you can't do saber throw - move - melee attack since that would be 2 attack actions - thankfully they put that little caveat there to make sure it doesn't happen.

My bad, problem solved!
Perhaps in the demo you saw, they player had used the "Implacable" priority card and actually activated Vader twice in that turn?
