VEry good spot... but if you are referring to the Eternal Wrath from OaAI, the book lists thats as being an SFS Ship, not a KDY.
Now thats possible an error on its own.

Strangely that's the Wookiepedia line on it too. I assume the reason is the gravity well projector is an SFS creation, and SFS buy in hulls from KDY to produce the Interdictor. There's plenty of cases where different car companies share a chassis but produce different cars under their own brands.
The same name refers to two classes of ship. There's the Interdictor Cruiser, based on the Vindicator hull, statted out in the AoR CRB and shown in Rebels, and the Interdictor Star Destroyer, based on the Imperial hull, statted out in Onslaught at Arda 1, appearing in Empire at War. They have interestingly different stats: The Star Destroyer version is basically just an Imperial with half the weapons filed off, the Cruiser version has a very different statline to the Vindicator- with no weapons beyond point defence.
That’s a good point. However, for the purpose of this conversation, I’d be inclined to go with the Vindicator-based version as found in the Immobiliser. Outside of the “Eternal Wrath”, that’s the consistent image that FFG has been using for the Interdictor in all the other locations, including the Armada ship at https://www.fantasyflightgames.com/en/products/star-wars-armada/products/interdictor-expansion-pack/

Yeah, my point was basically that it couldn't be the Star Destroyer-size one as that has been statted up separately. I filled in the template for those, I've got a few more up on a site here (really need to finish uploading the ones I've made).
