I'm reading the advanced rules in section 2.14.2.4. It states that each multiple has no print values. Does that include symbols?

yes. They have no PRINTED symbols...however they still have "non-printed" symbols.

So if a card says "The number of symbols on cards in your card pool" it includes multiple copies...

if it says "The number of symbols printed on cards in your card pool" it does not.
