Any clue where I can find a "blank" map (meaning; with all the stars and nebula and such but no worlds or names on it ) to give to my players (sort of like a character sheet) that they fill out as they go along...

I doubt it - you'd have to take the white one:

and then put it into paint and erase all the names manually.
The Koronus Expanse has tens of thousands of stars in it. Any you find is pretty much blank.
Of note...
I like how the Dark Heresy interior cover map bears an olde fashion flavor - with sea monsters errr void beasties (looks scarey) and an art style with begs to be a player handout - just saying lol.
