I had fun with this one trick pony. Here are the build highlights.

Correlian human, for piloting boost

2 points computer , 2 points engineering , 3 points pilot planetary and space , 2 points gunnery . 2 points light-saber .

4 points agility ,

Careers Star fighter ace (for exhaust port) assarii (for AGI light-saber and reflect) also possibly Pilot from AoR for the enter/exit vehicle as a free action skill.

Force powers are Move (To tear open hatches) and enhance (for both force jump as a move action and the agility point. )

Against AT-ATs tanks and other vehicles. first round (from cover as an ambush) tear off door as standard action. Jump into the vehicle as a move action. 2nd round pull out driver as standard and enter drivers seat as a free action. face opposition as a move. next few rounds kill stuff while giggling. As AT-AT is getting wiped out jump to a new AT-AT. rinse repeat.

In space. use destiny point with exhaust port to crit the shields off a star destroyer. it can not hit you at these silhouette differences usually 6 black dice. You can wail on it all day. Pull the Aluminium Falcon maneuver from EP 5 to land unseen on the back of the command deck. Make a hole and jump in. Fight your way into the command deck and hold it while exposing the rest of the ship to vacuum. invite friends to new ship. Send holo to Yavin 4 of you standing on top of the command deck grabbing your big ol' brass nuts and see if you don't get knight.

Um... what about the 72 or so Tie Fighters that are used to find you, flush you out, and then destroy your vehicle with great pleasure for the command crew?
