Can I ram more than one ship with the VT 49?

I've got plans for Oicunn with Engine Upgrade but after testing Anti-Pursuit Lasers might be a better choice.

VT-49 Decimator: Captain Oicunn (42 + 14)
+ Determination (1)
+ Mara Jade (3)
+ Intelligence Agent (1)
+ Navigator (3)
+ Dauntless (2)
+ Engine Upgrade (4)

I'm curious how people would rule it if, let's say in a jousting scenario you're directly facing your opponent who's in a box formation. Neither side does anything but straight maneuvers. Sometimes it'll physically bump both, sometimes it won't, just because of the little variation in the spacing that always happens when you move, but in one sense, it really *should* be hitting both. Once you deviate from these orthogonal positions, though, you wouldn't really be able to make such a case.

It's basically impossible for a ship to truly be parallel with the board. It will almost certainly be off kilter by a small fraction of a degree.

Exactly, you play according to what is on the table. It doesn't matter if ships were deployed near each other and almost parallel, if the ship is at a slight angle or slightly behind the adjacent ship then that's how you play it. This means that it is impossible to ram multiple ships, as you will always hit one at least 0.000000000000000000000000000000000000000000000001" before you hit the other.

Unless, as the FAQ indicated, they other ships hit you first and then you fail to move at all. That was ruled to be a case of one ship overlapping and touching multiple ships. In practice though, that is the only way it can really happen.
