How would this XEX squad do?

The point of the list is to not die. Luke is painful to kill for obvious reasons. Etahn has 5 agility and can focus with PtL. And Tarn with R7 is also painful to kill for squads with fewer ships.

I would rather take Wedge over Luke but that's because I've never really been a fan of Luke. My usually XX set up is Wedge with Swarm Tactics and Tarn Mison with R7 because if you're flying in formation shooting first is always great.

Its ok defensivly and ok offensively. But not great at much. The only hole I can poke at it is that you've only got 8 hull and 7 shield before your done.

I would fly it and if you have fun with it- go for it.

Etahn was already the most tanky ship due to barrel roll, focus and evade. This gives you the ability to take 2 actions basically forever, focus evade is enough here.

Luke gets more tanky and more offensive. Lone wolf plays well with r5p8 and Luke's ability.

I'd say I like this one better except for the way Luke is loaded. Lone Wolf may make him a very nasty "sole survivor" but he's got to last that long. I kind of like R5-P9 on him as a shield recharger but that assumes you have a Focus token left sitting around. I'd guess the biggest thing is simply the Hull upgrade; I think it would go better on one of the non-regenerating ships or it should have been exchanged for a SU which you can recharge.

Now if that is supposed to be R5D8 I can see the Hull Upgrade making a bit more sense although its not something I'm going to recommend for Luke.

Focus and Evade on a 3 agility ship is not enough. I usually play Fel... and Fel often dies starting the turn with a focus and evade token. Now focus and 5 agility is a completely different matter.

I wouldn't bother with R2-F2. I see what you are trying to do with the 5 evade dice + focus but you are much better off (and saving points) with 4 dice + focus + evade anyway.

I actually used to run a list very similar to this. It was:

Tarn R7

Corran Horn VI FCS R7

Luke VI R7

the idea was that everyone was tough to kill and taking target locks that could be either offensive or defense. It was fun and actually worked pretty well in some casual games. I replaced R7 with R2-D2 on Luke fairly quickly and I see that you have already done so.

This Corran loadout actually worked wonders. The FCS and firing first allowed for some cool face to face shots that went in my favor due to R7. At least in theory. Sometimes it works, sometimes not.

Tarn with R7 was of course fantastic as usual.

I wanted to change this list up and fix it to use at a tournament but it just didn't have the firepower to compete with only 3 ships. Luke wasn't cutting it. Even with R2-D2 and his natural ability he can be taken out in two rounds of focus fire with no problems (which I did against an enemy luke in a tournament). So he changed to Wedge for maximum firepower and I wanted to have some fun with PtL + engine upgrade + R2 astromech. It made wedge really fast, a great flanker, and if he didn't need speed, a target locked focused shot will wreck just about any ship. (plus it gets passed C3p0 crew card since the falcon gets -1 evade).

Corran lost R7 due to points and Tarn stayed as is. So I lost the initial focus of the list: to have 3 tough to kill Rebel ships. Instead, I had two "better" massive firepower ships and Tarn Mison. I quickly realized that everyone was just ignoring Tarn because he is so much harder to kill and the other two are giant priority targets. So I swapped him for Biggs, also 25 pts. Then they had to shoot Biggs instead of Corran and Wedge could flank or Biggs protects Wedge and Corran flanks.

I took it to a local tournament and won, so there's a little going for this list as 3 ship Rebel list.

So to answer your original question, I think the list is fun and can do well... but I think that my offense focused version is more optimized for a tournament and fast paced game setting. Even though individually each ship is hard to kill, there isn't too much synergy in this XEX 3 tough ship list and still at a disadvantage in raw firepower compared to a 4 ship Rebel list (Corran tends to make up for the missing firepower).

Bad pun out of the way, I understand you want your ships to live but given red dice always beat green I've found the best way to make your ships live is to kill the other guy first.
