The dice app gives you no advantage over real dice the game I lost where I rolled eight blank greens was with the app.
It just means we arnt constantly asking each other to pass a red or green dice over, also it makes sounds pew pew.
The pew pew sounds are cool and all, but the novelty wears off. It wears off especially quickly when 3 different tables are running soundboards at the same time...

Oh trust me, I'll get shot. I tend to roll all blank greens at inopportune times.
I use the Dice app on my Kindle Fire for Star Wars EOTE (since I am the only one with dice)and X-wing when I don't have enough dice,I only have one core set.
I use an ipad loaded with the updated rulebook, FAQ, maneuver reference sheets, and a pdf with all the pilot & upgrade cards. I think it can be faster to look through the physical books and pdfs, but thats just more stuff to carry around when I can have it all in one place. When I game master rpgs I use both printouts/books and the ipad or laptop, depending on what works best for different bit of reference materials.
The official dice app is....well....official. It can be used in tournaments and such. I did buy it and have used it on occasion. There are times when I feel my luck with the dice is just TERRIBLE. I bought the app in desperation one time. It's the same as the dice are, but I get a mental satisfaction when switching at times.
Just a note, I have Android and I don't know if these are on iOS.
The best app I have is X-Wing Companion. It's GREAT! It's got all the cards and ships in the game in it. It's all linked so that you know which product it comes with. You can view it by product, too. It's all inter-connected, so when you look up X-wing and a specific pilot, you can then look at sub categories for astromech, torpedo, etc. Very well done and I use it all day long. I admit that it's on my phone as I carry that more than my tablet.
My favorite app to use during gameplay is Star Wars Sound Set 1. It is a bunch of sound effects from the movies, including small snippets of some songs. Nothing like the start of a new round and clicking on EP4 TIE FIGHTER ATTACK to get the blood pumping. Whenever a ship gets blown, I love to hit TIEFIGHTER BLOWUP2. Tie Fighter screech sound effects are always nice when you are just moving around. It's about as dorky as making "pew pew" sounds, but it's even more fun than that. I will say that I used the free version, but the ads did pop up too much. I emailed the guy and asked him to make a pay version to kill the ads. He made one for $1 and I bought it! Totally worth it.
Oh, as a side note, you can make ringtones, too. I've got Chewbacca as my text notification and nothing gets a room full of strangers laughing more (like at the Doc's).
I have a Samsung Tab Galaxy 4 with the dice app from FFG and use it for the EotE and AoR rpg's due to its ability to figure the dice results quickly. I don't use it for X-Wing because it's easy to figure out the results of a die roll in that game.
