Can I enhance an enemy unit with 2 Dark Memories ? If so, do they stack so that if 1 or more focus tokens get placed on that unit than that unit will receive 2 damage, one from each Dark Memories card?

From what I can remember of the cards text yes.

Yep. Each copy of Dark Memories resolves separately and the end result is 2 damage done.
