Just wanted to point out that this particular point really isn't one to hang your hat on. The offset cockpit has literally never been an issue with the Falcon. I'm pretty sure you never see the rest of the ship from inside the cockpit and it's just another inconsistency between the internal and external Falcon parts. As far as the people inside the Falcon are concerned, it's just a cockpit, a short corridor, and a ladder with guns at the top and bottom.

Realistically and conceptually yes, I recognize how much it'll really mess up your piloting. The B-wing would have the same issue.
In the Star Wars movies, as far as the pilot is concerned, there is nothing except the cockpit, a corridor, and guns. There is most certainly not 98% of the ship off to the cockpit's left, neither visibly nor physically in any way. It just wasn't addressed at all so there is nothing to show us that the offset cockpit has any effect at all.
