Force sensitive isn't a career. It is a universal specialization, and yes you can have as many specializations as you can afford.

I made my player buy FSE at the start, as well as any Force Abilities, like Sense. Otherwise you need some story line to at least enable initial training. This was pretty cool because it was draining on the player's development, which contrasts with the other players with simpler development paths.
Be warned that developing two Specializations is very slow. It's even slower if you have odd Specialization trees.
I not sure if AoR will take transferring existing EotE characters over, but we came to the conclusion that when AoR comes out and if the group chooses to join the Rebellion (or Empire), they would have access to more training resources and the like, and could purchase a second career for ~40XP (or something).

Why would you do that? Just buy the new specialization, it should work seamlessly.
I had a GM that limited Force Sensitive Exiles to Colonist or Explorer classes. He basically made it so you roll up a normal character of those 2 classes, and then spend 20 or 30 xp to unlock exile. You'd also need to buy your force powers separately. So you essentially started with a bare-bones colonist or explorer, but with a few sprinkles of awesome. All in all, fairly underpowered characters at the start. But by the time you got to about 100-150 xp, you were a runaway ass-kicker.
