How do you do everything you can in Edge of the Empire?

I play a Scout/FSE and up to a certain point I felt mechanically challenged and mostly useless in comparison to highly specialized characters that would accomplish amazing feats. It took a conversation with my GM to uncover the fact that being able to do a lot of things that other people couldn't meant I was always filling in some gap or enabling a plan that otherwise couldn't happen, especially when people didn't show up to play. I realized that even if I couldn't succeed like everyone else, I had enough breadth of skills to do better on average for many things rather than extremely well for specific things. Since many of my groups' checks are hard, I could meet hard checks on equal footing.

So to repeat my question, how do you masters of the 3 Green dice do what you do?

I assume you mean starting out what career/spec can do the most? Once you amass enough xp its fairly easy to be multi faceted.

I feel the like the best jack of trade types are smuggler/scoundrel, soldier/medic, and engineer/scientist.

Scoundrels get a combat skill, the initiative skills, social skills, and thieving along with talents to buff all of them and Pilot(S) on top.

Medics have access to the full range of combat skills. Obviously their tree focuses on healing but they do get a dash of survival, and a little defense capability, a little offense capability and Well Rounded. Well Rounded leads to being able to branch out skill wise, they could use what should be a good Int and go for Mech and Computers, or maybe grab social skills or a bit of the two. Stim App lets them add dice to any stat on success so they can sort of upgrade any skill check.

Scientists get Range(L) and between their career and spec they get Mech, Medic, and Computers. Their talent tree isn't super, but they do gain access to Intense Focus which is the universal skill upgrade and pretty darn handy.

Those three would be my nominees for all around starting out.

I'm playing a human Assassin / Gadgeteer / Pilot. I have a TON of useful skills and since I started with 4 abilities at 3 I'm pretty well rounded.

We just hit 650 xp. Almost all of my class skills are rank 3+

Congrats. I only just hit 125xp and I'm playing a Scout/FSE. I imagine a game where I'm a 650xp superhuman would be quite predictable.

Far from it. It has actually gotten far more enjoyable for everyone as we have gained more xp.

It's important to play to the aspects a Scout is geared towards. Sure, you may not be the hardest hitter in combat, but with a couple ranks in Quick Strike, and 2 ranks in Disorient, you can do well to make a particularly annoying enemy have a slightly tougher time attacking the combat-focused guys in your group. Group needs to look for something or find stuff for protection from the harsh nature of a world - you've got it covered with Forager, Heightened Awareness, Familiar Suns and Natural Hunter. And maybe the group has a better space pilot than you, but if you're chasing somebody down or running from them on the planet in a speeder, or even on foot, you might be the best bet with Shortcut.

Then there's the matter of Signature Abilties. You probably won't be able to get some for a while, but both Sudden Discovery and Unmatched Mobility are great ways of boosting your abilities in either finding stuff or getting a leg up in combat.

And as a Force Sensitive, you can use all sorts of Powers to upgrade your potential, either with Sense or Enhance to improve your skills for a short time - and possibly knock you up to the skill levels of the other characters, Move if you want an alternate way of helping out in combat that isn't just shooting and punching, or if you guys need clues on how to proceed in an adventure or what to look out for, you've got Forsee.
