Well for one, I dont think they'll forget. They'll only stop if it becomes unprofitable to support EotE.
And for two, they are 100% compatible systems, so most supplements will actually support the entire line at least in part, and many will support the entire line completely with just an extra box or paragraph to adapt it to EotE, or AoR, or FaD, or YLSWSYBtNMWWCI.
I don't see the supplements as supporting any particular game. The only real differences between the games are tone, and Obligation vs Duty. There's nothing keeping someone from using the Explorer book for an AoR game.
YLSWSYBtNMWWCI is my favorite.
And seeing as they have releases scheduled months and months in advance, I don't peg FFG as "forgetful" types.
Plus that we don't even know what they've got in development that hasn't been announced yet. They might "slow down" their EotE product line to allow for more AoR and FaD material, or they might just devote more resources/manpower to writing more supplements for each line.
And anyway, like Ghostofman intimated (and we all understand this I hope!), FFG are much more likely to continue a product line if that line is profitable. The more money the get from something means the more resources they can put into its development.
In short: you like, you buy, they make more.

The only thing to watch out for there would be Specializations belonging to a career you might not have access to (for example the Soldier isn't in EotE, but we will likely see some Soldier specializations in future AoR supplements). Not that this is a big deal, as you can simply spend 10 more XP and buy into it as a non-career spec. But still, certain supplements might be perceived as more/less useful to individual play groups based on what game they were developed for and expand upon.
In short: you like, you buy, they make more.
That's it in a nutshell. I reckon FFG will continue to make supplements as long as the license allows and they make money doing so.
As Micheal Bay said during production of Transformers 2 when Shia LeBouf broke character mid-scene to complain about how stupid the movie's plot was... "It's only stupid if it doesn't make money!"
So as long as Star Wars turns a profit and FFG doesn't get it's money invested in a weird shoe company, we'll be getting plenty of support.
Also sneaking onto movie sets is awesome...
I understand the backwards compatability of the system, but I totally LOVE the focus on backworld, underworld fringe themes in EotE and I just hope we're not done seeing gear, weapons, ships, adventures, characters and more that support roleplaying in that chapter of the SW universe.
But as you said, as long as people don't move away from buying the products... they shouldn't move away from making them.
