There isn't really a hard limit. A character with Agility 6, Gunnery 5 and a targeting system granting two upgrades plus using True Aim 2 could start with 7Y1G.

I suggest just using the orokos.com app. It sums results in the end, very useful.
I wish we could buy a set with only Challenge and Force dice. (Maybe a setback and boost tossed in for good measure)
I wish we could mail-order the dice separately as individual dice. Especially given that once PC's get to rolling 3 yellow dice on skill checks, I will need 3 red dice for opposed checks.
I've been tossing the idea around in my head as to what I would do if I needed to go over my 2-packs of dice limits.
First thought - use the app. Unfortunately I LIKE rolling dice, the feel, the clatter on the table, the anticipation of it all. I know that it is irrational sentimentality, but dice apps just don't do it for me. Just like I prefer books over PDF's.
Second thought - turn excess dice into re-rolls of that type (or "inferior") of dice. So for example, it a dice pool called for 3 red dice, that would be 2 red dice and a re-roll of a single red/purple/black dice. If the pool called for 5 black dice, that would be 4 black dice with a re-roll of a single black dice only.

Three sets should be enough. If you don't power build your character to win the game that is. You don't need to have 6 in a stat to be effective.

Played quite a number of games with just 2 sets.
The beginner boxes are def worth it. First, you get an entire set of dice, which retails by itself for 10-15.
You get a fold out map with two sides, tokens, and a free adventure. If you're comfortable with the core rules, just use them instead of the beginner rules that come with it.
It's a great value.

Upgrading dice takes a green to a yellow, or adds a green which can then be upgraded again to a yellow.
Three sets does our table pretty well most of the time. Occasionally when there is a lot of action happening at on e we have to slow down and wait for dice.
I do plan on getting the AoR Beginners set so that will add a fourth set of dice.
There's also a dice app if you have a smart phone. I use it exclusively. No limit to the number of dice in a roll, it totals and cancels everything for you, and gives you the final results.
And it costs around 1/3rd of a full dice set.

This app is for Android as well and bought on Amazon I was allowed I think 3 devices to install it on, so I have it on my phone and my Kindle Fire HDX.
The app has a max of 20-22 dice, but more than enough for a skill test, just not enough for a game of 40k or similar.
...especially if you play orks. Nothing like rolling 60d6 to hit on the charge for a mob of slugga boyz and seeing the look on your opponents face when you pick up all those dice and roll them all again. ![]()
I want one more (a fourth) set, before I'll be 100% happy with what I have available. Just to even out my dice pool... 9 ability and 9 difficulty, and only 3 challenge dice? Bah! I need even numbers!
Most of the time, 5 will be more than enough, with 6 appearing rarely - more is technically possible, but it's not common enough to warrant having more dice on the table.
Reasonably, the highest you'll see are 7 Ability dice, but that's only if someone has 7 (6 + Implant) in a Characteristics but has not a single rank in a skill using that characteristics, but still wants to use it.
You always have the option of just rolling some dice twice or so.
There really is no highest number for dice to roll.
The base dice pool is equal to the higher number(characteristic/skill), then upgraded to the yellow proficiency dice.
Example: Shooting a blaster. Agility 3 and ranged light 2 would have a base dice pool of 3.
3 green ability dice,two of which are upgraded to 2 yellow for a total of 3 base dice pool.(1 green/2 yellow)
Then you add the appropriate difficulty dice plus and boost or setback dice.
Technically,the dice pool will vary in size.
After looking at the set of dice that came with the Beginner box and then reading the beginner box rules and scenario, I just opted for two sets of dice. That should be fine. I wish I could have held off and gotten the second set from the Age of Empire Beginner set, but I'm IMPATIENT!

Keep in mind this probably costs thousands upon thousands of experience points to get.
Here's the breakdown:
Character would have to be an Explorer so they could get the ability to do three maneuvers in a turn. They'd also need an agility of 7, brought up by a cybernetic enhancement, and to cap it off, Force Sensitive.
The dice pool is upgraded a total of 18 times from:
5 ranks in Gunnery
7 ranks in True Aim - 6 from talents, 1 from a modded Targeting Array
2 times from a modded Targeting Array
2 times from Sense
1 times from a Destiny Point
and 1 time from an Intense Focus Maneuver
16 Boost dice are from:
10 ranks in Quick Strike
1 time from True Aim
Twice from Touch of Fate
Once from Accurate (you'd need to be using a Quad Laser Cannon)
Once from an Aim Maneuver
Basically they'd probably need the first initiative slot in the first turn, have Sense flipped on beforehand, be right next to the enemy, and would use Unmatched Mobility as an incidental, then do an Intense Focus maneuver, then True Aim maneuver, then Aim maneuver, activate Touch of Fate, flip a Destiny Point, and finally fire on whatever poor ship is the victim.
Honestly, this is probably what Wedge rolls everytime he's out in a ship.

I purchased two dice sets alongside my CRB, and I expect that to suffice for the early gaming sessions. If- and I say if- I can convince my group to try this game's engine and dice mechanics, I expect at least one player, if not two, to purchase their own dice set. I do have one player who is skeptical of "fiddly" dice...but he's a great player and longtime friend, so he may convert.
I'll also be acquiring the Beginner Game at some point in the future. The dice will most assuredly come in handy, as will the maps, and I intend to cannibalize the rule book for a homemade GM screen.

A pair of considerations. Max Talent Ranks I think that is 5 and max Stats are 6+1(Cyber) and max Skill Ranks are 5+1(Cyber).
So above 12 Proficency seems possible but... maybe too extreme. Not sure.
In my mind a "usual" max would be above 6 or 7 Proficency and up to 5 Boost.
By I have one question, max difficulty is 5 Challenge plus 5 Setbacks plus Destiny point to enable check?
