so I was wondering about a certain situation: soontir fel gets a focus token when he gets a stress token so if I use elusiveness which makes my attacker (in case it is unclear I mean a guy attacking fel) reroll one of his attack dice and gives me a stress token I then (I'm assuming) get a focus token. can I spend that focus token on the defense roll I just rolled for that attack or do I have to save it for the next attack on me?

You can spend it on the defense roll for that attack, but you would not have just rolled it yet. Order of attacks goes like this:
1) Attacker rolls attack dice
2) Defender modifies attack dice
3) Attacker modifies attack dice
4) Defender rolls defense dice
5) Attacker modifies defense dice
6) Defender modifies defense dice
You'd use Elusiveness in step 2, gaining a focus token at that time which you could then use in step 6.
As posted above, the order of operations for attack and defense is important. Often, players will roll the dice at the same time, letting the attack decide how to modify after seeing defending dice, but the defender is already at a disadvantage. If you are a defender, wait until the attacker is done modifying before you roll.
