Q: If the Dark Cultist defeats two or more Enemies in a battle (or two or more Enemies in a Psychic Combat), does she roll the die to receive a gift for each single defeated Enemy or only once?

I would say she rolls for every defeated Enemy, but I was dubious because she fights them all at once with a single die roll, as if they were one bigger Enemy.

Not to mention I hate the Dark Cultist from yesterday evening.

I'd say she rolls twice. I mean, she does get 2 trophies as well.

The chart says that you get a gift from the gods if you defeat a enemy. So if you defeat 2 enemies, you get 2 gifts from Zeus;)
