We got some creative people on here so I figured I would drop a challenge. How would you run a game of bolo-ball ( http://starwars.wikia.com/wiki/Limmie )with this system? What rolls would you use and why?

Athletics obviously.
I think a case could also be made for the Perception, Discipline, Vigiliance, Cool, Cunning, and maybe Skullduggery (if you're keen to cheat).
Perception-Cool should also be pretty clear on why you might use them. Keeping you head on a swivel and not getting out of position.
Cunning strikes me as a way you might describe a crafty (but not cheating) player. This might be the slightly older guy who can't quite keep up with the youngsters anymore, but he's got a lot of veteran savvy and some wiley tricks up his sleeve. (Damnit! I'm describing myself...Youthful athleticism, please come back! I'll treat you better this time. No more knee injuries, I promise!)
Maybe even Resilience if it's a long drawn out game.

I have a player who has an obsession with SmashBall . Going to have to do a lot of improvisation to include it into the game sessions.
