You may have more than one stress token. Easy ways to do it include combining Tycho with Push the Limit as well as the Imperial Shuttle pilot who can take stress for other pilots (can't remember his name off the top of my head). I think there's a critical hit that could give you an extra stress as well.
No matter how many stress tokens a ship has, a green maneuver removes only 1 of them.
Another possibility is if your opponent has Rebel captive, or Kath Scarlett. If you pull a K-turn, then shoot at Kath with a Rebel Captive, you'll then have 2 stress, and if Kath shoots back and you cancel a crit, you'll then have 3. It can take a while to get rid of that amount of stress too, so it's a viable strategy.

No K-turn (or any red maneuver) if you have any stress tokens.
Yes, be very careful when selecting maneuvers when some of your ships have a stress token. If you accidentally assign one of them a red maneuver (and don't have adrenaline rush to change it to white), then your opponent gets to select any white or green maneuver from the ship's dial for it to preform instead. It's a good way to end up with your ship off the edge of the board.

As noted, you may choose to do a red maneuver if you are already stressed. But, it's not advised. As db noted, you're opponent then chooses your maneuver instead of what you selected. You may not like the results.

I had this happen at Worlds with a frazzled opponent having a bad day. He tried to K-turn his last two ships two turns in a row to get shots, without thinking. I was in the process of setting his dials so that one ship was going immediately off the map and the other one was going, if not straight off the map at least nowhere good, when he took the dials back and decided to simply concede the game. It's rare but it's definitely something to watch out for.
Even with Tycho (Buhalin, ha!) who can pile up stress tokens like he's a hoarder, the trade-off is that he effectively loses access to the only two red maneuvers on the A-Wing dial; the 3 and 5 speed K-turns.
