3 out of my 4 matches were fairly normal builds (had a first round bye) but 1 match I played was definitely built for the purpose of taking out a swarm. So not really left field but very niche.
(Missing a 2 pt upgrade)
Vader + Assult Missles + Squad Leader
Captain Jonus + Assult Missles
Major Rhymer + Assault Missles + Cluster Missiles
~20pts in missiles alone, that's taking a gamble in my book.
I was running 2 Firesprays w/ HLC and Mauler w/ Swarm so I just set one on the left edge, one in the middle and one or the right edge of the board. One of the assault missiles was fired through an asteroid at a BH, he threw 3 hits, I threw 3 evades. The only other assault missile he got off only did 1 damage to each of my BHs.
Really since it was worlds there weren't a whole lot of surprising builds, just a lot of very similar builds.
I'm not sure I saw anything left-field either - but you can be the judge (I think game 2 is probably the best candidate):

Not necessarily weird but 2x Bounty Hunters + Recon Spec + seismic and Omicron + Vader crew was pretty effective to see and I wasn't really expecting it.
I didn't get to play against it but the XXYYB list that made top 8 was exciting to see.

But i am convinced the list would have been even better with A-Wings instead of Y-Wings, because now you have nicer manoeuvering liberty when things get messy on top of that you have 2 points for your X-Wings to get them R2s!

My 8 AP TIE swarm was able to handle it okay (I lost one or two TIEs, though a few were holding on with chewing gum and duct tape after being flown through the asteroids a couple times by a Y-Wing). Ions were not something I had practiced a lot with, so my strategy was to take the HLC down ASAP then try to slowly eat at the other ships while spreading available targets around for the other B, so that anything in range of the Y's could handle taking one damage per turn (and keep pointing in various directions so some of them still would have shots despite ionization). It was a very interesting puzzle to solve for, and one of the most fun squads to fly against of the day.
Also, Gavin rocks. Very nice guy and very strong opponent.

Another Win. I dropped 1 Alpha round 1 and had the other down to 1 hull. My opponent made a gutsy move to try to pull the K turn but ended up off the board. That fairly well sealed it.

yeah the Han shoots 1st list should be called Han shoots 1st and 2nd with gunner to boost his already hard to deal with innate rerolling abilities.

That was me! Glad I could be your weird squad of the tourny. Wish I had put an HLC on Ibby instead of the APT.
I played against 2 YT's and 2 Y's, which was something I hadn't seen before. He crowded me like crazy. It was a mess.

That is Rebel Convoy. Do you remember who you played?
There were at least two Rebel Convoys in the tournament (that I know of) because I faced one as well in my 3rd match, and it was NOT the guy from the Team Covenant forums who ran it in the recent Vassal tourney.
I can't recall his name. He was from Omaha and is on the forums. Nice guy. I beat him, but I evaded like CRAZY so it wasn't a really great determination of squads. I'm not going to completely say that I COULDN'T win against him, but he did do what he wanted, and still didn't win because of my hot dice. Alas.
