Could someone give me a write up of the AEA-500 prospecting craft?
It can be found in the Galladinium's Fantastic Technology sourcebook. I haven't been able to find this one.

Based on the
Rebel Alliance Sourcebook

(which has a "Modified Trast A-A5 Speeder Truck" as the "Rebel Speeder Truck"), your best bet may be to simply modify the A-A5 stat block in a manner such as below:
Vehicle Type/Model: Mining Speeder/AEA-500.
Manufacturer: House of Tagge Mining Company.
Maximum Altitude: 2 meters.
Sensor Range: Close.
Crew: One pilot, one dig operator.
Encumbrance Capacity: 220.
Passenger Capacity: 0.
Cost/Rarity: 25,000 credits/3.
Customization Hard Points: 2.
Weapons: Forward Mounted Triple-Beam Mining Lasers (as Light Repeating Blaster)-this weapon's entire profile uses personal scale, not planetary scale. (Fire Arc Forward; Damage 11; Critical 3; Range [Extreme]; Auto-fire, Pierce 1).
I admittedly lifted the mining lasers stats directly from the 74-Z speeder bike, while the first "block" (Silhouette, Speed, Handling, Defenses, Armor, HT Threshold and SS Threshold) in my determination ended up being 1:1 identical to that of the A-A5 (EotE CRB p. 250).

Far horizon has some pretty examples for manual labor crafts, like construction, that will fit to mining.
Based on the Galladinums catalog entry (Seriously that thing is the Kevin Bacon of Star Wars RPG supps)...
Sil 2 (maybe 3, it's length is listed at 20m, but WEG had a really bad habit of thinking 1m=1ft, and the illustration looks way closer to 20 ft putting it well into sil 2 territory)
