Well, I didn't want to be the one to start this thread, but I've put some thought into what I would like to see.
Of course there will be Humans, as each Core Rulebook is intended to stand alone.
My list is based on some of the Jedi Masters from the prequel era Jedi High Council:
Cereans (Ki-Adi-Mundi), Iktotchi (Saesee Tiin), Kel Dor (Plo Koon), Nautolan (Kit Fisto), Togruta (Shaak Ti), and Zabrak (Eeth Koth).
That's only seven. I don't care what the eighth species is, as long as the ones above are included.
An interesting choice for the last one would be Lannik (Even Piell), just to give us a small species.

This is really close to what I think, too. And I pretty much agree. I mean, if they make Kel Dor, Togruta, and Nautolan, then 3 of my favorite races will be in there! I'd die a happy man. However, I think that instead of Cereans, Iktotchi, and Lannik, we will in fact see the Cather, Miraluka, and Mirialans. All three of them are playable races in SWTOR, which I think will aid their chances. They are all pretty popular, too.
There are two Mirialan jedi who show up frequently in the Clone Wars show (Barriss Offee and Luminara Unduli) so I think they are a shoe in with the rest of them.
Cathar have been really popular lately, and everyone loves cat people. They may not have shown up in the movies, but they clearly don't care that much about making the playable races characters of any note in the movies, since Ithorians, Duros, Trandoshans, Gand, and Gran don't show up for more than a scene or two at the most, and none of them really have any speaking roles. It isn't hard to imagine them throwing in a popular race that didn't show up in the movies that has been known to have force sensitives that have been famous (like Juhani.)
Miraluka are very iconic force users as well, and while they too haven't shown up in the movies, they are incredibly popular in games and other EU sources. Jerek (Dark Forces II: Jedi Knight antagonist) was an Imperial Inquisitor and Dark Jedi, and was the primary antagonist, and Visas Marr (Kotor II) was a companion and temporary adversary. Both were very iconic, and their constant force sight would make for an easy match with the supposed theme of the book and would be very cool to do. Using the same logic as the Cathar, I don't think it matters that they aren't directly in the movies.
I could see some of the others, but I feel like (and personally really want
) these seven to appear alongside the Humans.
I'd love to see Devaronians. They're also a favorite of mine, and their concept of Grace (see Tales From The Mos Eisley Cantina) would provide some amazing roleplay options, some nice light side/peace/balance-seeking tie-ins, and an iconic race to add to the playable pantheon.
Some interesting facts:
Devaronians see further into the infrared than almost any other species, have denser bodies than humans+fast healing, and benefit from heightened senses.
They are also prone to predatory instincts that they consciously counter, while having deep empathy for the lives they take--hence the notion of grace.
Fun takeaway quotes about Devaronians, courtesy of Kardue'sai'Malloc--"The Butcher of Montellian Serat"--and Tales from the Mos Eisley Cantina:

@ Endrik Tenebris - I'm not sure that the folks at FFG will put the Mirialans in, as they are one of the many near-human species. Considering how broad each species is in terms of characteristics, I would personally just use the human entry for all the near-humans. I, of course, could be proven completely wrong when the F&D Beta is released! ![]()

@Nashable - And having cyborgs as a race wouldn't need to happen, after all any species can become a cyborg. We haven't gotten started playing yet but one of my guys played a cyborg bounty hunter in the Old Republic MMO and wanted to play a guy like him again. I'm just having him make a human and then I'll give him some cybernetics parts with some obligation, he will basically have a life debt to the guy who saved him after a bad speeder crash.

Very true, I was just being dramatic
Though the Cyborg could be a replacement for the Droid with some interesting twists on chargen (e.g. boost a attribute for free due to cybernetics and/or armor increase etc.) while still allowing force use.
I actually made a Cyborg template for general use. It is obviously a rough draft, but I like it. You can find it in the dropbox on my signature.
