I've read at least one book where an Inquisitor's retinue included a Stuntie. I'm not sure why we couldn't have those just like Only War has Ogryn.

Yeah, if we're going to throw xenos into the mix, I see no reason not to include abhumans in a future splat.
I am also totally open for Ogryns and Ratlings. It would also add nice choice.
Maybe if we ask real nicely we'll get Squats.

In GW's current material, Squats are an abhuman offshoot of Humanity (6E rulebook), whilst Demiurg are their own species as a client race of the Tau Empire (BFG).
Yeah. It seems pretty likely that the Demiurg was one writer's way of sneaking Squats into things without going against GW canon too brazenly, but as of 6th Ed they are back to being canon, to a very minor extent.
While I agree with the practical concerns (you're not going to convince everyone your team's Eldar is a mutant), I'm sure if you had it as an option you'd have lots of people wanting to play one.

Unfortunately there is (for now) no information other than them being mentioned. The 6E Rulebook has a rather cool appendix with fluff about topics ranging about who is controlling the Black Ships to details about the Machine Cult to the field-dressing of lasgun wounds. And in the section about abhumans, there was a list featuring some known (ratlings, ogryns) as well as some entirely new mutations... and it just so happens that it listed squats as well! You could say it's an easter-egg, but listed is listed.
I suppose in a way it makes sense - in terms of physiology, they are little more than fat ratlings with beards.
Your comment regarding a possible relationship between them and the demiurg is interesting. I did not really consider it so far, but if the development of squats is a local phenomenon dependent on specific environmental factors (such as worlds with a higher gravity), I could well imagine that squats are simply those members of the lost human colonies that have been rediscovered and incorporated into the Imperium of Man - whereas the demiurg are the people of other human colonies that were situated further away and were found by the Tau first.
Coincidentally, the above theory would be in line both with Jervis' suggestion about playing squats using the Imperial Guard Codex as well as the "their worlds got eaten by them dang Tyranids!" bit.
The BFG demiurg were, if I recall, an early attempt by GW to reinvent the squats and make them more serious, starting with a less ridiculing name, but personally I'm happy to see oldschool squats at least being mentioned again. As an abhuman sub-caste of Imperial society their name also poses no issue at all, as it is completely in line with Imperial policy to ridicule mutants - see "ratlings".
