Can Chewy use the text to protect a character and use his text to deal back the damage moved to him?

Yep. All damage is assigned first before it's applied. So if 3 damage was dealt, 3 is first assigned to the original target by the DS, then you might re-assign 2 of that 3 over to Chewbacca say, using Protect. Then it's applied. So 2 damage has been effectively dealt to Chewbacca, meaning he can wing 4 back over the fence. As long as it's all during an engagement, it doesn't matter if Chewbacca is participating in that engagement or not.
