I couldn't find the answer for this. If I use Lightsaber Deflection to deal 1 point of damage to another unit which has Shield token, can I prevent that damage with using Shield token or it's forbidden because Lightsaber Deflection is my event?

To answer the underlying question, rules say "A player may discard a card’s shield token to prevent one damage or one focus token that would be placed on the shielded card by an attack or an enemy effect (i.e.it cannot prevent damage and focus tokens placed by its controller’s costs or effects)."
If you deflected damage to one of your own cards, it would be being placed on the shielded card by your own effect, so therefore you couldn't use a shield.
Let's say that damage is dealt by Heat of Battle or Force Choke or something else and opponent does not have any unit.

I'm not sure that's the correct answer. Is the source of the damage Lightsaber Deflection, or is deflection just redirecting it (just like the protect keyword which does work with shields)?

Shields can block damage moved by Guardians of the Peace which is technically a friendly card effect, because the original damage came from an enemy source.
I would assume the same rules are in force here. The damage's original source is an enemy affect, as the cards reads
"When damage is dealt to a friendly non-Vehicle unit, deal 1 point of that damage to another target unit instead."

It's a little different.
On Lightsaber Deflection it is written:

"Deal 1 point of THAT damage." What damage? That damage, the damage from the enemy attack. You've taken one point of enemy damage, and moved it another card, in the exact same way as protect lets you deflect damage from one card to another.
The damage is considered sourced from an enemy attack and shields can ALWAYS block attack damage.
Now if the original damage source was directly from your card effects, like Spice Visions, Let the Wookie Win, you'd be out of luck.
