If I choose a non-career specialization, are all the skills of that career and specialization now considered career skills for me, or only the bonus career skills of that particular specialization?

You guys are right, ONLY the skills for the out-of-career Specialization are Career skills.

Yeah, the only way you can get Career Skills from actual Careers is from your starting Career at creation. Otherwise, it is from specializations or certain talents (like the one found in the Force Sensitive Exile tree).
