I notice conversions of additional races but I was wondering if anyone tried converting some more starships to the system?

I did conversions of several starships over at the Gamer Security Agency, under the heading of "Equipment Labs." There's a good deal of other EotE stuff as well, including new threats and pre-made PCs. Check it out at gsa.thegamerntion.org.

As Dono says, the GSA has a good series of stuff or the link in my signature - the supplement one. There are two pdfs. The first one is quite large and includes other stuff. It's due for an update, but that will have to wait until after the core book comes, so I can remove and update ships according to potential revisions in the core book. The second one includes more adversaries and some attempts on capital ships and starfighters of the empire and rebellion.
