I'm thinking about getting a few more core sets to add to my card decks. Which, and how many, cards would you recomend that I pull from these extra sets?

just to clarify - when you say 'pull' do you mean add to your decks?
if so then people usually go with unexpected courage, test of will and hasty stroke
then it depends on your card pool, current quest, and what type of deck you run
in my tactics decks the two key cards are feint and thicket of spears so id go for them. other cards you may want are some extra attatchments like celebrians stone

Does that mess up the encounter decks if you start adding more core sets? Do you buy the entire core just for the player cards? Sorry I'm new and don't yet understand how deck building works since you're not only building your deck but the enemies as well.

Encounter decks stay the same. If you have multiple core sets you do not add them together. The only use I've found for extra encounter decks is to use them for the adventure packs for the following cycle. That way you do not have to keep swapping cards in and out, and you can keep a few encounter decks ready to go.
as for the player cards, the nice thing about having at least 2 core sets is you will have 3 copies of many important cards, and two copies of about 10 or so cards. I forget the count.
I think two core sets is provides a lot more deck building options if your just getting started and don't have the entire card pool yet. But you can certainly get a lot of mileage out of one set too.
Yes, if I were to add more cards to the core set, which ones should I add?
