I'm LOVING this game. I haven't played it yet, other then 'testing it out' and getting ready (going to GM the beginner box next month). I love the rules so far, so what are some of the BIG changes from the "red box" that was released that are different from the Core book?
What are the 'big' changes from the Beginner Set to the Core Rules shipping in 2 months?

There have no been no announcements regarding changes between the "pre-release" products (Beta text &, Beginner's set) and the final product.
The beginners set is likely a poor benchmark already, since it was never intended to represent the full set of rules for EotE. It is a simplified product to introduce new players to the system.

So far the simplified rules are AWESOME and I could see easily running any campaign with just them. So I'm hoping the Core set is more of the same, just more options, etc.

I don't think it is really "Changes" except more content
there'll be a critical hit table, presumably, for not only individuals but ships too. there'll be the Obligation mechanic, which is great. Character creation rules, obviously, rather than pregens, and a whole lot of information about crafting your own adventures. so… a lot will be different. not sure about the basics of the game. pretty sure that won't change (much…).
I had a chance to read through the core rulebook while running and playing in games over the weekend; here are a few things I noticed.
1. The final version has twice the pages of the beta version.
2. Much of the material looks similar to or the same as the beta; I think you could look at the updates that were released in PDF on the website for a better idea of how the rules evolved.
3. There's a lengthy "gazeteer" section with details about different planets and locations.
4. It looks like there's more of everything as far as equipment, ships and enemies are concerned.
5. There's a new adventure.

Cool! There will actually be a reason for people who bought the Beta to get the final rules.
Well, presumably part of that reason will be to actually get the finalized rules. Some things are bound to change even between Update 11 and final print.

Very true, and Sam Stewart did say that there may well be additional changes even after the Final Week Beta Update, as there was further discussion of several aspects of the game in the Beta sub-forum well after the Beta peroid came to a close. And from what Sam and Zoe have said during their guest stints on the Order 66 podcast, it sounds like there's a few EotE campaigns being played around the FFG offices, so they may very well have come across additional tweaks that needed to be made long after the Beta ended but before the final layout was approved and sent to the printers.
