Hey guys,

So I haven't encountered this but I would like to do it if it's legal. The scenario:

Valar Morghulis is played. I have Gilded Plate ( Response : Pay 1 gold and discard Gilded Plate to save attached character from being killed or discarded) on several characters and Coint Mint ( Any Phase : Kneel Coint Mint to move any number of gold tokens from it to your gold pool) with all its original gold on it. When Valar is played, can I tip the Coin Mint to get gold to save these characters?

No - plots have to resolve completely before an Any Phase action can be taken.

However, if you are anticipating Valar, you can use the Coin Mint before plots are selected, although that may tip your hand as to what's coming.
