Just a quickie this one. Han Solo lets you re-roll all your dice once. Target lock lets you re-roll any of your dice. If I have a target lock from my falcon onto an enemy ship, and I roll bad, I can use Han's ability for a full reroll. Can I then use my target lock to re-roll any other dice I want if I don't get what I need?

Nope, each die can only be rerolled once. You can use your target lock to re-roll some of your dice and then Han's ability to reroll all of the dice you didn't re-roll with target lock though. I have no idea why you would do that, but you could…

Han Solo with Luke as his gunner, fly into battle with some TIEs. After his maneuver, Han, Target Locks a nearby TIE intercepter.
Han shoots first (always has always will) and rolls 1 hit, 2 blanks. Spending his target lock, he re-rolls the 2 blanks only to roll another blank and a useless focus. Deciding that he rather just "Fold" the first attack and just give Luke (or any gunner for that matter) his shot and potentially score greater damage.
Its risky, a bit Brash, but "Hey, it's me"
On a similar note of gunners and damage. I have myself, as well as witnessed others, making a interesting choice durning our games with gunners. I have opted NOT to use an Evade or Focus token on defense and settle for taking 1 damage, rather then risk a gunner (especially Luke) firing at me agian, this time without any tokens as a defense.
I've done it, and my opponent's done it. Who would have thought? 'No thanks I don't want to use my evade token, I'm good.' lol Its Maddness! So one might say, "I know you'd only take the 1 damage, so I'm gonna re-roll my 1 hit and hope for a blank because my gunner going to blow you away!" and then you roll 3 more blanks, and 'Han Solo' that attack re-rolling yet agian…
Anyway I read your post and I immediatly had to think of a situation where you might acctually do this (Han re-rolling after Target Lock re-roll). It had never occured to me, that Han's abilty could be used in that way. I admit this would be a rare and bizarre moment indeed. Well done dbmeboy , thanks for the idea can't wait to try it!
Nice. And that is at least part of the reason why this game is awesome. Though it does seems difficult to use that way since you have to decide to use Han before your opponent rolls any of their defense dice…

In a game a week or so ago, hothie did this several times when I had the Han/gunner combo going against him. It is quite a potent combo - I was taking out one of his TIEs almost every combat round. But he did use the "take the damage to avoid the gunner attack" several times, to survive and try to hit back one more time.
In a similar vein, I've opted to not use a Focus token in similar situations.
Ship 1 fires on me and when the dust settles, 1 end up with 1 hull damage and an eyeball showing. Looking around the table, I see Ship 2 is within Range 1 of me and has a scarier primary weapon than Ship 1 did.
I take that damage from Ship 1 and hang on to my Focus token for likely use against ship 2.
I've also done it firing on people, realizing that as I'm unlikely to remove the ship from the table even if I utilize the Focus token, I might be better off holding onto it because some lower PR pilot has me in his sights at Range 1 or whatever.
This kind of stuff is what I really enjoy about X-Wing- there are situations that arise all the time that don't have no-brainer, "I always do this ", kinds of reactions. Keeps the game different and interesting!

How can you fold an attack?
if im reading the rules correctly roll attack die, modifiy attack die, roll defense die modify defese die only then can you compare results only then has the attack been delared a hit or miss.
only then if the attack is failed can the gunner launch a second stirike but han can re roll that attack.
so if han hits you the first time by a single hit yes take your punsihement cause it could be more hits next time.

You're reading the rules correctly. In this case, Han rerolls his single "hit" result attempting to make it miss as well since it will do at most 1 damage. If he rerolls a "hit" or gets a "critical hit," no harm done from where he started. But if he successfully changes it to a blank or focus, he'll get another attack with his gunner with the potential to do more damage. I'd be more likely to try this trick with Luke than a normal gunner, personally.
