Quick question. If I have Dragon Egg on my opponents character card, could I then ambush with a card in my hand that has the shadow crest, e.g. Black Hatchling?

Ambushing shadows cards is quite possible, but remember that you have to pay the printed cost (which in the case of Black Hatchling, is s0, or, as explicitly stated in the shadows rules, a total cost 2).

Specifically, Shadow cards can only be played by going through Shadows. But Ambush is a "put into play" effect that bypasses the rules and limitations on "playing" a card.

And, as has already been pointed out, the printed cost of a Shadow card always includes "2" for the s.
