If I have a ship with the Stealth upgrade, and one critical hit gets by. I have my ship with Draw there fire take the hit. Does the Stealth device go away? I'm thinking it doesn't because the other ship would take the hit, but I'm not sure.
Draw there fire and Stealth upgrade

Your interpretation is correct. The ship is not hit and therefore stealth stays.
Incorrect. Draw Their Fire can only trigger if the defending ship was hit. It does not cancel the fact that it was hit, just moves one of the critical damage results to the Draw Their Fire ship. If the ship with Draw Their Fire also has Stealth, then Stealth would not be canceled.
Draw there fire says that you may suffer 1 of the uncancled hits instead of the target ship. It's the "instead" part that makes me unsure which way to go. It's not totally clear.
Yes, but the first part says "When a friendly ship at range 1 is hit by an attack ". Being hit by an attack is the condition for removal of the Stealth Device. So if Ship A (with Stealth) is hit by an attack (i.e. there is an uncancelled [crit] result) then Stealth will be removed from ship A, even though the damage is suffered by Ship B via Draw Their Fire. If Ship B also had Stealth, it would NOT be removed, since Ship B was not hit by an attack, but only suffered the damage from the hit on Ship A.
Exactly as dbmeboy said.

This is the correct interpretation, as far as I can tell.
Thanks Guys, what you say seems logical, just wanted make sure the condition was the hit, not the damage done that removes the stealth device.
