So I have these cards what talk about 'while The Blackfish has 3 or more power', so on and so forth (from the Lords of Winter expansion). What is 'power' referring to?

Power is the blue tokens with a crown on them. The things you need 15 of on your cards to win.
Remember that you can claim the power that you need to win on characters using effects like Renown - which, of course, The Blackfish has. So after The Blackfish has earned 3 or more power through Renown (or other card effects), the "not kneeling to attack" kicks in.
Ok, cool.
So does that mean it has to be 3 power won by using the Blackfish? Or 3 or more power aquired by any means?

Completely understand that and I haven't even been playing that long!

So up till now I have just been putting my power in a pile and doing nothing with it… should I be placing power on things? Or is it just occasionally a card says put some power on it, like the blackfish?
And speaking of things I feel like I'm missing-- I have the 1st edition, and I saw somewhere that there were revisions and additions… am I missing a lot?
And whats the little s mean next to the cost of some characters in these expansions? Perhaps I didn't buy them in the right order and I missed the one with the new instructions…

Power usually goes to your house card. Specifically, that's true for power that
- is claimed for unopposed challenges
- is claimed for Dominance
- is moved due to a won POW challenge
- is claimed for winning a challenge against an opponent whose title you oppose
- comes from a card effect that says something like "claim X power for your house"
Sometimes power is put on characters (or, rarely, other cards), though, specifically power that
- is claimed for Renown (like the Blackfish)
- comes from a card effect that says things like "character X claims Y power" or so.
Then there's the keyword Infamy, which lets you put power on cards that have it, and the Agenda Brotherhood without Banners, which requires you to put power on characters with the Brotherhood trait instead of your house card.
As for different editions, errata'd cards sometimes get updated for new printings. Some chapter packs that were originally released in a 40-card format (10 cards with 1 copy each, 10 cards with 3 copies each) have been updated to the now common 60-card format (20 cards with 3 copies each). Two of the big box expansions have been re-released in the x3 format. Overall, you're not missing much.
The cards with the little s are Shadows cards. The mechanic was introduced with the King's Landing cycle. You can find the rules in most Big Box expansions and Chapter packs, as well as here .
