Does Ion Cannon make a stressed unit keep it's stress token for another round if it's damaged? If so, Y-Wings might be a little more viable.

In general, yes. The Ion Cannon forces a '1 straight white' maneuver so a Stress token is not removed. It's a great way to negate Vader if you can catch him with an ICT while he's stressed and keep him that way.
I believe there is some debate regarding whether an R2 astromech overrides this (makes all 1 and 2 maneuvers green) but the final answer for that will have to wait for an FAQ.

Don't know what you mean by "damaged" precisely, but if an Ion cannon scores a hit on a ship with a stress token, it would keep that stress token next round since it has to perform a 1 ahead WHITE maneuver.
The only claim to controversy on this point is whether the generic R2 card (I think that's the one) which changes all level 1 and 2 moves to be GREEN could override this. I think the consensus (among players) is that the Ion cannon effect would take precedence, but it's not 100% clear cut and calls for a rules clarification.
