Can the overlord spend how many cards he'd like each turn, as long as the cards allow it ?

This happened to us in the Fat Goblin, with the fatty running fromt he torture chamber to the exit in almost 1 go. We lost because of that.,

No, can't use a card with the same name twice on the same trigger. So no Dash + Dash (both are "when monster is activated", or close to that wording), but Dash + Frenzy (both are "when monster is activated") is fine because of the different card names.

"Two Overlord cards with the
same name cannot be played on the same target in response to the same
triggering condition." (p. 16)

and the example clarifies further:

Example: During his turn, the overlord player decides to activate his zombie
monster group. After moving one of his zombie figures, he plays “Frenzy”
on that figure, which reads “Play this card on a monster during your turn.”
The overlord player cannot play an additional “Frenzy” on that particular
zombie during his turn. However, he may play another “Frenzy” card on a
different zombie during his turn.
