Alright Chaps

If Meera Reed is killed in challanges and enters moribund state, can I use her text to put her back into the shadows. Were not sure on this one and it has led us to maybe rethink moribund state as we thought when a character is in moribund state it can still use its card effects but still always ends up in dead pile.

Correct. Once a character is moribund, an effect can't change its destination unless it specifically states that it is doing so (wording like "instead" on cards like "Retreat").

So while Joffrey Baratheon can trigger his "when a lord/lady is killed" off even himself dying, that still doesn't change where he's going to end up at the resolution of that action window.

Meera, however, can't trigger her own response to put her into shadows, because her destination is already the dead pile (and her ability doesn't specifically say it can alter that).

You are missing the part that a card cannot enter a moribund state if it is already moribund. Since Meera is already moribund:dead pile, she cannot trigger her response to make her "moribund:shadows". If it was a save effect, it could do so, or a replacement effect (such as shadows-Arya) then it could do so. As such, she can only enter shadows if another Stark character leaves play. This is not limited to your own Stark cards however.
