You can use Greatjon's ability to jump him into a challenge of that type, yes.

So "the losing opponent cannot attack or defend during challenges of that type" means "the losing opponent cannot declare attackers or defenders during challenges of that type", then? And this is different from a stealthed Greatjon because Stealth prevents the character from defending whereas Wars are Won with Quills prevents the player from attacking/defending?
But couldn't it be argued that the wording "the losing opponent cannot attack or defend" on Quills goes beyond the mere declaration of attackers/defenders in the same way that "That character may not defend during this challenge" from the CS Stealth rules goes beyond the mere declararion as a defender? Quills *is* worded differently from CS Stannis after all.
Then again, you'll probably say that the only instance when a player can be considered to be attacking or defending is when he declares attackers/defenders. That's the only time when the player does something that directly results in attacking/defending. When a player uses the Greatjon, he's not attacking/defending, he's triggering an ability, and Quills does prevent the player from attacking/defending, but not from triggering an ability that lets a character attack/defend. Or something like that. Right?

As for the rest of it, it really comes down to the fact that by attacking the player you hit with the event, you are making him the defending player (and therefore making him defend in some sense). If you are going to say "cannot defend" goes beyond the framework event of declaring defenders, you'll need to take it all the way and say that the player in question cannot become the defending player at all. So unless you are prepared to say that Wars are Won… not only prevents Player X from attacking in that challenge type, but prevents all other players from attacking him in that challenge type, too, the proper way to read the card is that Player X cannot declare attackers or defenders in the specified challenge type.
So it seems this may have similar implications when we consider the icon enhancement mechanic that the next chapter cycle introduces?

(We need to wait and see, though.)
