When my opponent takes control of one of my dragons, can he use that dragon to satisfy claim? I was trying to find it in the rules, but I couldn't figure out if claim must be satisfied with cards you own or simply cards that you control.

Your opponent can pay claim with any card he controls. So, yes, "your" dragon would be a valid choice.
When the rules talk about "your characters" or "your cards," it always refers to characters/cards that a player controls. If something is limited to cards a player owns, it will say that specifically.
