I have purchased all 6 chapter packs of the Defenders of the North expansions. However not quite sure what the best way to use the night watch and wildling character cards are. How should I use the wildling characters with no icons when attacking or defending? Any suggestions?

Take a look at The North agendas (as errata'd). That'll get your started.
They won't do anything for Wildling characters without icons, but maybe the OP was thinking about Night's Watch characters, since there are only 2 iconless Wildling characters (one of them is also Night's Watch and the other can gain an icon). The Night's Watch agendas will give your Night's Watch characters one icon each. Also the location The Wall will allow you to defend challenges with Night's Watch characters from your hand, regardless of icons.

When I first read this post last night, I thought he was talking about iconless Night's Watch characters. The Wildling ones seem to have their own solutions like you had said. Maybe he mis-wrote his post?
