I am interested in starting to play the game. I didn't even know it was around until I started to play the Lord of the Rings game. However, there are so many cards that I do not know where to start. Is it too late for me?

First off- welcome! No- it's not too late. Pick up a core set and play a few games. If you like it- pick up a second core and start fleshing out your decks. There are several beginner's guides out there to help you pick out which chapter packs you'd want next.

Contrary to popular belief, you do not need to have 3-6 copies of every card in order to play.
It's not too late the same way it's never too late to start playing other CCGs/LCGs like MtG, Yu-Gi-Oh, etc. as long as you are not planning to become a competitive player right away. If you go for casual play with friends, you can limit your initial card pool to any size you want (based on the investment in the game) and still have fun.
What is the best way to get into the game then? I know I'll need the core set but is this game like LoTR where I need more than one box to get a playable set? There are a lot of adventure packs,should I just start playing them in order and use it that way to add to my collection? Thanks!
Of course, you'll want to start with the core set. It'll contain everything you'll need to learn to play the game, and start getting enjoyment from it.
I think the standard advice is to grab a second copy of the core set, so that you can really get the most out of the cards you get in there, and then pick up a Deluxe Expansion for a house you are interested in, and go from there.

Two Core sets is pretty close to a requirement. A House expansion once you've figured out which House you want to start out with as your main one comes next. You can skip straight to that for a bit, but you're eventually going to want duplicates of the better Core set cards.
After that, it's up to you. One of the main reasons I decided to start collecting this game is that you don't have to buy multiple booster boxes every cycle in the hopes of getting at least some of the best cards (and then tons more for singles of the ones you missed). I got all the CPs that were already out (luckily, I started before the seasons CPs got scarce, but that hopefully won't last forever). Now, one new chapter pack a month gets me all the new cards.
Team Covenant sells "House Packs," BTW. All the cards from a six-CP cycle for one house. Easy way to get caught up for a House on a budget.
Btw, there's one difference to the LotR Core Set. Most cards (something like 90%) come in 1x in the AGOT Core Set, and only a few resource locations come as 3x. As far as I recall, the LotR Core had 2-3x of quite many player cards, in addition to all the encounter cards? So getting a second box is FAR less tedious.
The House specific deluxe expansions offer really good value for your money, so I would echo the suggestion on starting with those. If you want to start on chapter packs (the analogy of adventure packs), then a decent suggestion might be to start with the newer sets (A Tale of Champions - which is already fully available and Beyond the Narrow Sea - for which the fist CP just came out). The Beyond the Narrow Sea CPs are even targeted at newer players getting into the game.
For beginning players, I would also recommend the First Tilt series of articles on cardgamdb.com. These are excellent articles that focus on players just starting, from both a strategic and card-purchasing standpoint.
I picked up 2 core sets today but it looks like to get a complete playset I need 3 core sets. Is that correct?
Yes, that is correct. However, you should be able to run the 4 core set houses without much problem with just 2 CS.
You would get more mileage for your dollars by expanding with more houses (GJ with Kings of the Sea, Martell with Princes of the Sun) or your favorite CS house (Lords of Winter for Stark, Kings of the Storm for Baratheon, Queen of Dragons for Targaryen, and LotR for Lannister).
I'm kind of OCD about having a full playset of LOTR. I like being able to create any deck, I'll just have to search ebay for the missing cards I dont' have or just go in for the set.
